David and I got Bingsu in the small, vegan dessert shop Pan Honesta in Itaewon, South Korea. We showed up very late at night the first time we stopped by and most of their spoon cakes and other delights had sold out; my friend Naomi got their pistachio bingsu and my obsession was born. We went back later and got the Valrhona Chocolate Bingsu. Something David can eat that I can control the sugar content of? Sign me up.
And it's on the to-do list! First, gaining access to my KitchenAid. Second, acquiring the new fine blade Shave Ice attachment that supposedly can make kakigori (Japanese style shaved ice) and bingsu (Korean style shaved milk). Then, a blizzard will hit the household. Window panes will rattle. Kittydog will sprint off in an orange blaze. Bingsu will be made.
Why vegan? Maybe it's environmental. Maybe it's... shh... political. Or maybe David just has a really weak constitution.
Bingsu
Ingredients
1 ½ cup almond milk
2 tsp sugar
½ cup coconut cream or cashew cream
Steps
Warm milk in the microwave or on the stove top and mix sugar in. Let cool to room temperature. Freeze in ice tray or ice mold.
Use a food processor or shave-ice machine to process the frozen milk into bingsu “snow.” Consider adding a layer of sauce in the middle. If using a KitchenAid, insert the fine blade into the bottom of the KitchenAid Shave Ice attachment, place the frozen milk in the ice cup, and attach the device to the mixer. Turn the mixer to high speed and shave ice into a bowl.
Add cream on top.
Note: freeze bowls before adding snow so dish lasts longer.
Strawberry Sauce
Ingredients
2 cups frozen strawberries
½ lemon
1 tbsp granulated sugar
Fresh strawberries
Steps
Blend 2 cups of frozen strawberries to small chunks. Set aside 1 cup, add the other cup to a saucepan and bring to medium heat.
Add granulated sugar and lemon juice. Bring to a rolling boil and turn off heat. Allow sauce to thicken.
When making bingsu, add the 1 cup of blended strawberries to the bowl in layers.
Pour strawberry sauce over bingsu. Add fresh strawberries on top.
Chocolate Sauce
Ingredients
¼ cup unsweetened cocoa powder
2 tbsp maple syrup
2 tbsp water
1 tbsp almond butter (maybe?)
1 tsp vanilla extract
Pinch of salt
Vegan chocolate chips
Chopped almonds
Steps
Whisk chocolate sauce ingredients together until fairly smooth. Microwave for 30 seconds. Whisk again until completely smooth.
Pour chocolate sauce over bingsu. Add vegan chocolate chips or chopped almonds.
Obviously, I'm going to have to test out the quantities of everything. I'll also have to see if I cut the sugar too much. I like to make recipes simpler, smaller, and less sweet. I've perfected the art of cooking for two. David cooks for an army. So, with our powers combined, hopefully we can iron this out and update it with our experiments and results!
